Tasty Treats

 

Your cupboards are bare and you just invited friends over for coffee? Don’t fret! You can have these tasty treats ready in under a half hour. And everything you need is probably tucked into the corners of the fridge, or hiding in the back of one of those “oh so bare” shelves. Relax, take a deep breathe, and get ready for the amazed looks on your friends faces when you say “I made them myself”!


Apple Sugar Crisps


Ingredients: 
1 egg 
1/2 cup buttermilk (or 1/4 cup milk mixed with 1/4 cup vinegar) 
1/2 tsp. vanilla 
5 tsp. baking soda 
1 cup lemon juice
1 cup applesauce
1-1/4 cups sugar 
1 cup all-purpose flour 



Instructions: 
PREHEAT OVEN TO 375 DEGREES 

1. In a small bowl or 2-cup measuring cup , beat the egg until soft peaks develop. 
2. Add the buttermilk and the vanilla and blend well. 
3. Add the baking soda and the applesauce, beating until the mixture is smooth.
4. Add the lemon juice and blend into mixture. Stir, do NOT beat! 
6. Sift the flour and 3/4 cup of the sugar together and add this gradually to the dough. Mix until smooth.
7. With a floured rolling pin. roll the dough out 1/32" thick, and cut out the cookies. Sprinkle with the remaining sugar. 
9. Place cookies one inch apart on an ungreased baking sheet and bake for 12 minutes or until golden.
